Spinach Stuffed Chicken

Ingredients

  • 4 chicken breasts
  • 1 1/2 cups spinach
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 4 ounces cream cheese softened
  • 1/4 cup grated parmesan cheese
  • chili powder (optional)
  • paprika (optional)

Directions

  1. Preheat oven to 375°F
  2. Start by making the creamy spinach filling > In a pan, add spinach (ripped or shredded) and cream cheese together over medium heat. Once cooled, combine cheese, minced garlic, salt, and pepper
  3. Prepare the chicken by making a pocket/opening for the filling by slicing it horizontally (stop before cutting all the way through)
  4. Season the chicken in a bowl with the salt, chili powder or paprika, garlic powder
  5. Stuff the chicken with the filling and place on baking dish that is greased and drizzle oil on top
  6. Bake for 25-30 minutes or until the chicken is thoroughly cooked
