Pumpkin Chocolate Chip Cookies

Feel all the Fall vibes with these delicious and healthier pumpkin chocolate chip cookies.

Ingredients

  • 1 cup whole wheat flour (can be substituted for gluten free options)
  • 3/4 cup pumpkin purée
  • 2 tbsp melted butter (can be substituted for alternatives, such as coconut oil)
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • 1 tsp cornstarch
  • 1 tsp vanilla extract
  • 1/2 cup pure maple syrup
  • 1/2 cup miniature dark chocolate chips

Directions

  1. Preheat the oven to 325°F.
  2. In a large bowl, mix the flour, cinnamon, baking powder, and cornstarch.
  3. In a separate bowl, mix the butter or substitute, pumpkin purée, and vanilla extract. Once mixed, stir in maple syrup and add the flour mixture and dark chocolate chips.
  4. Line a baking sheet with parchment paper and spoon out cookie batter to make 12 medium sized balls.
  5. Flatten each ball slightly and add extra chocolate chips on top if desired.
  6. Place in the oven and let bake for 15-16 minutes. Once done, set out to cool for 10 minutes and then enjoy!
