Garlic Parmesan Spaghetti Squash

Ingredients

  • 1 medium spaghetti squash
  • Olive oil
  • Black pepper to taste
  • 3 minced garlic cloves or garlic powder to taste
  • 4 cups chopped baby spinach
  • 1/2 cup freshly grated parmesan cheese
  • 1/4 cup cream cheese
  • 1/2 cup heavy cream

Directions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. To prepare the spaghetti squash, cut off the stem and slice the squash in half lengthwise. Using a spoon, scoop out the seeds and fibrous strings.
  3. Place the squash halves on the baking sheet, drizzle with olive oil and sprinkle with black pepper. Place them cut-side down and bake for 40 minutes.
  4. While the squash is baking, heat a pan over medium heat. Combine the chopped garlic cloves (or garlic powder), baby spinach, grated parmesan cheese, heavy cream, cream cheese, and black pepper. Stir until the ingredients form a creamy sauce.
  5. Once the squash is done baking, let it cool for 10 minutes. Use a fork to scrape the flesh into spaghetti-like strands.
  6. Pour the creamy sauce into each squash half over the spaghetti strands and bake for another 10 minutes. Top with a little grated parmesan if desired.
  7. Enjoy right out of the squash!
