1 lb raw large shrimp, peeled and deveined (tail attached, if preferred)
4 tbsp olive oil or coconut oil
Black pepper, to taste
Directions
Set up three bowls: one with flour and black pepper, the second with beaten eggs, and the third with Panko bread crumbs and shredded coconut.
Dip each shrimp into each bowl in order: first the flour, then the eggs, and finally the bread crumb and coconut mixture. Ensure each shrimp is well coated with coconut.
In a large skillet, pour enough olive or coconut oil to cover the entire pan. Fry the coated shrimp on medium heat.
Flip the shrimp once one side is golden brown or cook until desired doneness.
