Chicken Pesto Caprese Sandwich
The perfect sandwich for caprese lovers!
Try this quick and flavorful recipe for any night in, a picnic lunch out, or anything in between.
Ingredients
(per sandwich)
Thinly Sliced Chicken Breast
1 or 2 Cherry Tomatoes
2 ounces, sliced Mozzarella Cheese
2 tbsp Basil Pesto
2 slices of Ciabatta Bread
Olive Oil, Garlic Powder, Salt, and Black Pepper to taste
Directions
Preheat oven to 350°F
Prepare chicken with olive oil, garlic powder, salt, and black pepper to taste and bake for 20 minutes or until cooked using internal temperature of 165°F
Use either a panini press, or a skillet at medium heat with cooking spray/oil to press the sandwich
Place bottom of bread on the panini press or skillet and spread 1/2 of basil pesto. Add cherry tomatoes (sliced), layered with slices of mozzarella cheese, and chicken breast
Spread the other half of basil pesto on the top piece of bread and place on top. Press both sides of sandwich until slightly brown or until cheese is melted
