Sweet Potato Nachos

A healthy spin on your favorite snack! A vegetarian snack/meal that can have animal protein added.

Why use sweet potatoes?

Sweet potatoes are nutrient-dense vegetables that offer many benefits for your health. Not only are they high in fiber and antioxidants which promote gut and brain health and protect the body from free radical damage, they also are a great source of beta carotene which converts to vitamins A and supports immunity and good vision!

Ingredients

  • 2 medium-sized sweet potatoes (can also substitute other potatoes or tater tots)
  • Seasonings
    • 1 tsp of cooking oil (olive oil preferably)
    • garlic powder
    • salt
    • chili powder
    • black pepper
  • Toppings:
    • 3/4 cup black beans
    • 3/4 cup shredded Mexican blend cheese
    • 1/2 cup salsa
    • 1/2 avocado or guacamole
    • 1/4 cup sour cream or plain Greek yogurt
    • other topping suggestions are jalapenos, green onions, chopped fresh cilantro, corn
  • Optional: can add pre-cooked ground turkey, ground beef, chicken, etc. for added protein

Directions

  1. Preheat oven to 425°F
  2. Wash, dry, and peel the sweet potatoes and then slice them into 1/8 inch thick rounds
  3. Line a baking sheet with parchment paper and spread out the potatoes, drizzle with cooking oil and sprinkle with seasoning
  4. Place in the oven and cook for 20 minutes, flipping once halfway through or until they are soft. Can turn broiler on for last 1-2 mins to crisp them
  5. While the potatoes cook, drain and rinse beans, and other toppings that need prepped, top the potatoes with beans and cheese, return to the oven long enough for the cheese to melt
  6. Once out of the oven, top with other toppings and enjoy!
