Stuffed Shells

Eat Right. Live Well! Try these delicious protein packed, stuffed shells the next time you and your family are feeling Italian food!

Ingredients

  • 1 lb ground turkey or ground beef
  • 1 jar marinara sauce
  • 2 tbsp olive oil
  • Oregano, basil, and black pepper to taste
  • 15-20 jumbo shells
  • 16 oz cottage cheese (small or large curd)
  • 1/2 cup mozzarella cheese (shredded)
  • 2 cups spinach, chopped
  • Parmesan or Italian shredded cheese blend to top dish

Directions

  1. Preheat oven to 350°F. Prepare a large pot of boiling water and cook pasta according to packaging.
  2. Bring a large pan coated with olive oil to a medium heat and add ground turkey and seasonings. Cook until brown.
  3. Add 1/2 of marinara sauce to the pan and reduce to a simmer.
  4. Mix cottage cheese, mozzarella cheese, chopped spinach, and seasoning in a bowl.
  5. Coat a cooking pan with olive oil and fill with cooked jumbo shells. Fill each shell with cheese and spinach filling and cover all shells with the rest of the marinara sauce. Top with parmesan/shredded cheese. Bake for 20-30 minutes.
