Stuffed Peppers

Ingredients

  • 1 lb ground beef (93%) or turkey
  • 1 cup marinara sauce
  • Bag of brown rice (8-9 oz)
  • 3/4 cup black beans
  • 6 bell peppers (color of your choosing)
  • 1 medium onion, chopped
  • 3/4 cup shredded cheese, use some to top the bell peppers

Directions

  1. Preheat the oven to 350°F.
  2. Sautee the ground meat until brown and then drain fat
  3. Cut the tops off the bell peppers, discard the stems and clean the peppers out.
  4. Chop up tops of the bell peppers and onion.
  5. Mix sauce, rice, chopped peppers, onion, black beans, and cheese with the meat and simmer until warm and soft.
  6. Place bell peppers on a cooking pan with a little water in the bottom of the pan to steam the peppers better.
  7. Fill the peppers with the mixture and cook for 45 mins. In the last 5-10 minutes add cheese on top to melt.
