Italian Marinated Grilled Chicken & Asparagus

Ingredients

  • 1 lb Boneless Chicken Thighs
  • Olive Garden Italian Dressing (or your other favorite marinade)
  • Bundle of Asparagus
  • Salt and Black Pepper to taste
  • 1 Tsp Garlic Powder
  • Drizzle of Extra Virgin Olive Oil
  • Freshly Corn on the Cob (shucked if boiling instead of grilling)

Directions

  1. To prepare chicken, poke holes into thighs with fork to marinate better and then move chicken into a Ziplock bag containing half of a bottle of Olive Garden Italian Dressing. Move to refrigerator and leave to marinate for at least an hour, or at room temperature for 30 minutes (the longer the better).
  2. Next prepare the asparagus. Wash and place in a dish to season. Drizzle with olive oil, and season with garlic powder, salt, and black pepper to taste. Mix the asparagus to cover each spear in olive oil and seasonings.
  3. Remove chicken from fridge and turn on the grill to medium heat. Place chicken thighs apart on the grill and do the same with the asparagus spears on the other end.
  4. Keep grill lid closed, but frequently flip the asparagus until they reach desired softness and flip the chicken when browned or cooked on one side (and to minimum safe temperature for cooking chicken - 165°F).
  5. If preparing corn, the ear can be placed directly onto grill or husked and placed in a pot of boiling water on a stovetop and cooked until dark yellow. Desired seasonings, such as black pepper and butter, can be applied when ready to enjoy.
  6. Plate and enjoy!
