Chesapeake Channa (formerly Snakehead)
Ingredients
1 filet of Chesapeake Channa
Olive Oil
Old Bay (or other seafood dry spice)
Directions
Preheat your oven to 350°F
Rub a generous amount of olive oil onto the prepared fillet.
Lightly sprinkle the fish with Old Bay, lemon pepper seasoning, or any other seafood seasoning that you like.
Place the fish onto a baking sheet and bake for 12 - 15 minutes.
Be careful not to overcook the fish.
When cooked properly the meat will not flake like other fish, but it will separate easily with a firm knife stroke.
Pair with your favorite side(s)
*Fish is considered done when it reaches an internal temperature of 145°F (63°C) at its thickest part. The flesh should be opaque and flake easily with a fork. Remember, fish continues to cook a little bit when removed from the heat.
